For a fancy presentation, line the inside of a ramekin with plastic wrap, then line with thinly sliced smoked salmon (extra pieces, not from 8oz used in recipe) making sure to leave enough overhang to cover the bottom of the pate. Then fill with the pate, wrap over the overhanging salmon. Cover with plastic wrap and refrigerate for at least 30 minutes. Invert onto serving plate to release and decorate with a dill sprig.

From America's Test Kitchen, a fool-proof way to grill moist salmon without it sticking to the grill. This is more a method than a recipe, so season to your own taste! McCormick's makes great dry seasonings to sprinkle on, and Montreal Steak seasoning goes great with salmon. I also like their mesquite flavor on this dish.

These cute tidbits were served one evening to our administrators who have worked so hard. We fixed up the conference room with "happy" colors and we all enjoyed ourselves. Mind you, this was at 8:00pm and they had arrived at 7:00am. The Corn Cakes tasted awesome - with all those wonderful ingredients, how can they be bad?
